Why does the newest version suddenly need to access all my data for all websites. It hasn't been like this before.

This is needed for the new DNS resolver using DNS Queries over HTTPS (DoH).

For that the add-on needs to contact the configured DNS server. As the add-on allows the user to change the server to use, it needs the permission to connect to any server.

Note that the add-on has not more permissions now than before. In fact it is part of the long term move to require less permissions.
